Back from the drop off

Oh god. Sorry about the near two-month drop off in blog posts. My life exploded at me at the end of April and I’m just now getting some time about me to sit down a write something. In the throes of trying to fit myself back into my old life, my old room, and my old friends, I’ve just barely had time to decompress. But alas, I’ve returned.

Progress report: I’ve graduated college with my BA in Journalism and I’ve moved back home. It’s been something of a readjustment moving back to my childhood home, seeing as I’ve spent the last five years of my life with my own place in which to drink, smoke, and make questionable life choices. Now I’m living with my mother again and even though she’s assured me I can come and go as I please, I’m still restricted about what I can and cannot do (especially with no income, which sucks mightily). At least there’s wine in the fridge.

I am currently in the throes of job searching (more on that later), and I now have a car. A nice, shiny (partly)new 2012 Honda Civic. For now, life is… Well, it’s livable. I guess. Maybe? Thing is, until I find a job that pays a decent wage, I can’t pay for my car, which makes me insecure, which sets of my anxiety, which is not good for my nerves. Which have been bad as of late because of my circumstances. Luckily, my father gifted me $1500 to get me by on the first few car payments until I find a job. I’ve got three months until I need to panic, but I’m in a constant state of internal unrest as it is, so that’s not such a big deal.

As far as the job search goes, I’ve probably applied to over 100 positions over the last few weeks and I’ve been on more than a few interviews. Hopefully I’ll hear something next week about a bank teller position. There’s also a PR specialist position I’m really hoping to hear about in the next two weeks that pays pretty well. Both positions have good benefits, so either way is good. On the brighter side, I’ll be teacher certified come July pending my application. I applied for some positions at a school district including district substitute, so I think I’ll be good come August. I’m trying to stay positive throughout this, which is really important for me right now. I think I’ll go fetch myself that bottle of wine now…

Thank god for the wind-down, or; it feel so good to be un-busy

Well, this week is off to a pretty swell start. I’m done with my formally observed teaching and I’ve only got 15 calendar days until I finish completely. Just yesterday I began shifting some of the stuff in my apartment around to make the moving process after graduation a lot easier and it turns I’ve got quite a few things to sell before the end of April, not counting my TVs and whatnot. Part of me is itching to store away all my kitchen stuff so my roommates can’t use it. I’ve complained about them a little before, but I haven’t relayed the sheer amount of joy I’m positive I’ll feel when I finally get out of my university apartment. On the bright side, I’ll get to inventory all the stuff I have and get rid of it accordingly. I’m really not trying to drag all that stuff back home with me, especially since we don’t need most of it. My mom and I already have a pretty heavy pack-rat thing going on that needs to stop. Seriously, most of the stuff we use back home is at least 15 years older than me. I’m not trying to add to that pile in the least with all my stuff. Continue reading

Looking into the future when I’m in more of a position to splurge a bit on a home or apartment, one of the things I’m most excited about is having a spacious and well-styled kitchen. The apartment I’m moving into in a couple of weeks has a redone kitchen (and bathroom…jackpot!) but due to the whole tiny square footage of the apartment, it’s just not that big.

When it comes to decor sites, I’m sure I’m not the only one who gets sucked into spending copious amounts of time on House Beautiful. How dreamy are these kitchens? I guess on the plus side, not having the liberty to design a kitchen means not having to settle for just one aesthetic. Because right now, I’m in love with all of these for different reasons!

I wanted to make ravioli from scratch for the longest time. Technically, this ravioli isn’t completely from scratch since I used wonton wraps, but it does save a lot of time. You don’t have to make the dough and roll it out yourself. What’s great about homemade ravioli is that you can add whatever you want as a filling. I chose spinach, kale, and mozzarella cheese. But if you prefer spinach and cheese, that’s fine too. Or you can add chicken for extra protein. Making your own ravioli allows you to customize the ingredients to your liking.
